Competitor’s Kitchen: Tomato Pesto Baked Chicken

Nothing beats an easy recipe you can throw together quickly and have it on the table within the hour. This easy recipe does exactly that, and it satisfies that Italian craving most all of us have on occasion. Serve with a heaping side of green vegetables!

Ingredients:
• 1 lb chicken breast
• 1 can Italian-style tomato paste
• 1/4 cup pesto
• 1/4 tsp sea salt
• 1/4 cup chicken broth

Directions:
1. Preheat oven to 375 degrees.
2. Clean, rinse, and slice raw chicken in to tenders
3. Coat an 8″ x 8″ cooking pan with cooking spray
4. Spread tomato sauce evenly along bottom of pan
5. Layer chicken side by side tightly on top of tomato sauce
6. Coat chicken with pesto
7. Sprinkle with sea salt and drizzle with chicken broth
8. Cover pan tightly with tinfoil
9. Cook in a 375 oven for 25 minutes or until chicken is cooked all the way through
